Our Values
Our values are rooted in an ancestral-based foundation. That means nutrient dense, organic, farm-to-table, locally sourced, real foods that are prepared simply and with love. We believe simplicity is gourmet. Culture precedes success. We are healing the children, and ourselves, while feeding them. No bad ingredients in equals no bad food going out to the kids. There is power and joy stepping into the kitchen. Remember: your kitchen is your medicine cabinet.


It wasn’t that long ago that we were not a sick nation. Our ancestors intuitively knew how and what to eat to thrive and prevent chronic illness. Ultra-processed foods became prevalent, and misguided theories about what was and wasn’t good for us to eat sent us careening onto a path of devastating health effects. Our values here at School of Lunch, which we call OurPlate, focuses on nutrient density, increased, quality proteins, healthy fats that support our brain function and gut, and the concept of food as medicine that all work to joyfully disrupt the trend of chronic illness.

The following are the tenets of the OurPlate value system:

- Serve whole, unprocessed foods
- Source locally and seasonally
- Support Regenerative Agriculture that builds soil health - regeneration vs extraction
- Use high quality animal fats in combination with fat soluble vitamins A, D & K that work together
- Offer fermented foods that provide beneficial bacteria, served as vegetables, dairy, condiments and fruits
- Properly prepare all grains, beans nuts and seeds to break down anti-nutrients and enzyme inhibitors to assist in digestion and absorption
- Use only high quality, unrefined salt
- Focus on savory over sweet, only occasionally use natural sweeteners such as raw honey, jaggery and maple syrup
- Maintain a no-waste kitchen by composting and providing education around food waste
- Lead meals with animal based proteins from holistically and ethically managed farms, ranchers and producers

Our approach to health is based on a multifaceted approach. The tip of our spear is getting people to abandon processed foods and switch to an ancestral-based real food diet. However we realize that more is needed to create a balanced life. Our internal world must work in symbiotic relationship with our external. We call this concept SŌListic Health. Sunshine, sleep, exercise, clean water and a connection to nature and our community…these are the tenets of our system. They are the basis for all we do; whether it’s our training academy, inspirational videos or the food we cook and serve at school!
